today i made home made chicken and barley soup form scratch! anyone that knows me, knows i am no cook! I must admit though, this is the best soup i have EVER had. I looked at a recipe to get an idea but added things and so on. here's my recipe:
teaspoon of olive oil
2 carrots, chopped
1 medium white onion, chopped
1 bunch green onions, chopped
3 stalks of celery, chopped
1 garlic bulb, minced
8 cups chicken broth ( i use low sodium )
about 1 cup chopped cabbage
2 medium chicken breasts if your husband eats a lot.
1 cup barley ( the more you use, the thicker the soup )
basil, oregano, parsley to taste. ( you can also add salt, however we try to stay away from it )
1. mix your carrots, white onion, celery & garlic in a soup pot with your olive oil. mix them around & let them do their thing until they are soft ( about 10 minutes )
2. add in your spices (basic, oregano, parsley & whatever else you choose to use). leave for a few minutes.
3. add in the rest of your ingredients & bring to a boil.
4. reduce heat to low-medium and cover. leave about an hour or until barley is big & soft!

i also made some soy chocolate & peanut butter ice cream.. it's good. recipe for that tomorrow!
